the lower the number the better [general explanation] but the higher the number more noise is introduced into the image, 100-80 shouldn't be noticeable

This is where RAW becomes even more problematic, the Adobe conversion will not be the same as the Fuji conversion.
High ISO will cause you some grain but if you're seeing a difference between JPEG and RAW in the same picture then it's the conversion causing it. (I think)
I think there is some software called S7RAW you should check out.

if you mean 800 yes noise would increase, with raw you also need to apply sharpening, try Picasa 2 free from google it can now see most raw files as well as JPEG's (it works with sony files)

80 ISO should have no discernible noise at all. The higher the ISO the higher the noise, my camera for example goes from 100-3200 ISO at 3200 ISO i have to use a noise reduction program (noise ninja) the higher the ISO the faster the shutter speeds available. so e.g. 100 ISO may have best speed at 1/30 at ISO 3200 you may get 1/400 speed (not exact guys so dont get the calculators out!)
